Step 1 – Prepare the Dal Wash the yellow moong dal thoroughly under running water until the water becomes relatively clear. Add the dal to a pressure cooker with 2 cups of water, turmeric powder, and salt.
Step 2 – Cook the Dal Pressure cook the dal for approximately 2–3 whistles, or until the lentils become soft and creamy. Allow the pressure to release naturally. If the dal is too thick, add a little warm water and mix well.
Step 3 – Add Moringa Powder Once the dal is cooked, reduce the heat to low and add 1 tablespoon of moringa leaf powder. Whisk or stir thoroughly so the moringa powder blends evenly into the dal without forming lumps. Simmer for 2–3 minutes.
Step 4 – Prepare the Tadka Heat ghee or cooking oil in a small tadka pan. Add cumin seeds and allow them to crackle. Add chopped garlic and dried red chilli. Sauté until the garlic becomes lightly golden and aromatic. Add curry leaves if desired.
Step 5 – Combine the Tadka and Dal Pour the hot tempering over the prepared moringa dal. Stir gently to distribute the aromatic tadka throughout the dal.
Step 6 – Finish and Serve Taste and adjust the salt or consistency if required. Garnish with fresh coriander leaves. A small amount of lemon juice can be added just before serving for a fresh, slightly tangy flavour.
Serving Suggestion Serve the moringa dal hot with steamed rice, jeera rice, roti, chapati, or your favourite Indian flatbread. It can be enjoyed as a simple lunch or comforting everyday dinner.
Cooking Tip If you are new to using moringa powder, start with a smaller quantity and gradually adjust it according to your taste preference. Add the powder after cooking the dal rather than pressure cooking it for a long time.
