Gathering

  • 2 cups fresh moringa leaves, washed and chopped
  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1 tsp garam masala
  • 1 medium onion, finely sliced
  • 2 tomatoes, chopped
  • 1 tsp ginger garlic paste
  • Salt to taste

The Alchemy

Heat oil in a pan and add mustard and cumin seeds, letting them splutter.

Add sliced onions and sauté until golden brown.

Stir in ginger garlic paste and cook for a minute until fragrant.

Add chopped tomatoes and cook until they soften and oil begins to separate.

Mix in turmeric, chili powder, and salt, cooking for another minute.

Add the chopped moringa leaves, stirring until they wilt and reduce in volume.

Sprinkle garam masala, cover, and cook on low heat for 5 minutes, allowing flavors to meld.

Turn off the heat, garnish with fresh coriander if desired, and serve hot.
